Ingredient: Norwegian Red fish
Category: Fish
Season: All
There are two different species of common red fish . Both are common to Norwegian waters, and are found all along the continental shelf.
Rose fish (Sebastes marinus), is also known as the ocean perch, Norway haddock, red perch, red fish, or hemdurgan; it is sometimes mistakenly called bergylt, bream, or snapper
Despite its common names, the rose fish is not a member of the order Perciformes of perch-like fish, but of its sister taxon the Scorpaeniformes; nor is it related to the haddock
It’s a popular fish in Scandinavia and Germany, and the fillets can be fried or the fish baked when whole.
Deepwater red fish (Sebastes mentella) , belong to the genus Sebastes in the family Scorpaenidae.
Deepwater red fish (Sebastes mentella) , Irish name, Péirse Dhomhainmhara,
Details:
The two main species of Red fish exploited commercially in the North East Atlantic, rose fish (Sebastes marinus) (or ocean perch) and Deepwater red fish (Sebastes mentella).
Both are gregarious (schooling) deepwater species, Rose fish (Sebastes marinus), occurs in waters from 100 to 1000 m deep while Deepwater red fish (Sebastes mentella) , is found from 300 to 1000m.
Rose fish (Sebastes marinus) is the larger species, reaching a maximum size of 100 cm and 15 kg, while Deepwater red fish (Sebastes mentella) grows to 55 cm.
Both red fish species are extremely slow growing and long lived.
They reach maturity at 10 to 13 years old and have maximum reported ages from 60 to 75 years old.
Mating occurs in late summer or autumn, females then carry the sperm and eggs and later larvae that hatch in winter.
The slow growth, high age at sexual maturity and reproductive strategy, of red fish, makes both species highly vulnerable to over-fishing.
ADVICE
Red fish stocks have been subject to intensive fishing pressure over the last 10 years.
The slow growth, high age at maturity and low rates of recruitment make them highly vulnerable to over-exploitation.
Most stocks are now at historical lows and are considered depleted.
